COMFORT FOOD

According to my research, comfort food is defined as a dish which is high in carbs, high in sugar, or high in fatty acids. In other words, unhealthy foods that we crave in order to feel better. Basically, the majority of us do not reach for carrots or protein bars when we are really stressed.

When I was a child, my father used to make mashed potatoes for me whenever I got sick. Not boxed potatoes, but real, need-to-be-peeled potatoes with lots of butter. The high carbohydrate and fat content qualifies this choice as one of my most beloved comfort foods.

In light of our current cold weather, I have been ordering more than my share of chicken pot pies. My mother often made this delicious entree, but unfortunately, did not leave a written recipe. Last night, I was very excited to find the closest thing to her culinary masterpiece in a local restaurant. It is unusual for me to have a strong emotional reaction to food, but this combination of yummy chicken and vegetables topped with a flaky, golden crust was the exception.

With all of the other shortages we are experiencing, hopefully this food dominated post will not result in a shortage of chicken pot pies or potatoes.
Carrots, anyone?
