SMALL NONPOLITICAL VICTORY

Most of us have reached the stage of life where we are happy to live without fanfare or drama and just want to feel good about whatever we are doing. Small challenges keep life interesting and small successes are rewarding.

Many years ago, 40 to be precise, I visited Palm Springs with my best friend. We discovered a diner that served a most unusual dish called a German Pancake. It was a delicious, crepe-like egg pancake with puffed sides that formed a twelve-inch circle which was sprinkled with powdered sugar. As a result, subsequent trips to Palm Springs always included a stop at this restaurant.

Through the years, I attempted to duplicate this amazing dish, but could never find a recipe that worked. I found several restaurants which listed German Pancake on their menu, but nothing remotely resembled this original giant puffy pancake bowl.

Last week, a video popped up on my computer screen demonstrating how to make this memorable item. Being as I have attempted to recreate this special dish throughout the years without success, I hesitated but decided to give it one more try.

Minutes later, I watched through the oven door in amazement as a huge, golden brown, bowl-shaped pancake formed. The incredible part was that it tasted just like the item I ordered and loved so long ago.

To me, it is all about the small victories.
